Matcha Milk Pudding 抹茶牛奶布丁(中英食谱教程)



Ever since my kids tried the famous milk pudding (shaped like a jumping ball with a white skin which has to be pricked open before consuming) at Taiwan Miaoli Flying Cow Ranch (台湾苗栗飞牛牧场) during our farm stay two years ago, they fell in love with this chilled dessert. 

Due to the warm weather, my kids have been asking for cold desserts so I made these simple and healthy homemade version of milk pudding in Matcha flavour as my family are great Matcha lovers! The texture is so smooth and velvety and pairing it with cooked azuki red beans will give it an even better taste.

这道滑嫩甜品最近天气实在太热了,孩子们一直吵着要吃冷甜品,所以就想到做这简易又健康的牛奶布丁,加上了清新微苦的抹茶,搭配着香甜的蜜红豆​,口感更丰富! 


Matcha Milk Pudding 
抹茶牛奶布丁
(recipe adapted from 'here')

Ingredients:
2½ tsp pure matcha powder
40 g sugar
300 ml fresh milk
2
¼ tsp gelatin powder
2 tbsp water

canned azuki red beans (optional) 




食材:
2½ 小勺 纯抹茶粉
40 克 细砂糖
300 克 鲜牛奶
2¼ 小勺 明胶粉
2 大勺 水
熟蜜红豆 (随意,可以省略)





Method 方法:
1. In a small bowl, soak and soften the gelatin in water. Set aside. 

1。在一个小碗,将明胶粉浸泡在水,备用。





2. Stir the milk and sugar using medium heat until the sugar has dissolved and mixture is almost boiling.

牛奶和糖以中火搅半至糖融化 ,牛奶稍微煮滚即可。




3. Lower the heat, sift in the matcha powder and mix well. Add in the bloom gelatin and mix till it dissolve into the mixture. Turn off heat.

转小火,筛入抹茶粉拌匀。再加入浸泡过的明胶粉,搅拌至融化,熄火。





4. Transfer the matcha mixture into pudding moulds or bottles and let cooled. Chill to set the pudding in the refrigerator for a few hours before serving. (optional: serve with cooked azuki red beans toppings)

把抹茶混合物倒入布丁模或玻璃瓶待凉。然后再放入冰箱冷藏数小时至凝固。(依个人喜好,可搭配煮熟的红豆一起吃。)

Hi Cheryl,

I remember seeing this sort of matcha milk puddings selling in a few nice cafes in Singapore. I was shocked when my cousin was paying to buy one of them! Wow!!! They are not cheap!!! Good that you can make these at home :D

Zoe, agree totally that not cheap to buy outside. You know, the glass bottles which I used here are recycled from the Hokkaido milk pudding bought during the Hokkaido fair at Takashimaya and each bottle of pudding costs almost SIN $7 each!

Indeed Karen, my kids said I should have made more as one bottle each is really not enough! Lol!

Hi L L, I got the Japanese matcha powder from Isetan supermarket, I have seen it at certain NTUC finest and Phoon Huat too. I bought the Hashimoto brand (prefer this brand as not so sweet compared to others and not so mushy too) of Azuki red beans at Bukit Timah NTUC finest, you can also find it at the Japanese supermarkets.

Hi verricelli, the designed bottles I used here are recycled from the milk puddings from Hokkaido. You can get plain glass bottles or other designs from Taobao.
