Quick & Easy Mandarin Orange Peach Strudel

This is a quick and easy Orange and Peach Strudel which was a hit when I served it to my guests at a pot-luck gathering party recently!

Ingredients used for this recipe.

Custard Cream

Ingredients食材:
3 egg yolk
100 grams caster sugar
55 grams plain flour
1 teaspoon vanilla extract 香草精
360 ml fresh milk

Methods 方法:
1. Separate the egg yolk from the egg white.

I have used the Tovolo Yolk Out to separate the egg yolk from the egg white easily.

2. Whisk the egg yolk and sugar in a mixing bowl until creamy. Sift in the flour and mix well before adding the warm milk in slowly and mix well.

3. Put the bowl of mixture over the stove using low heat and stir the mixture constantly. Add in the vanilla extract and continue to stir till it thickens. Set aside to cool before putting into the fridge.

For my Brandt induction hob, I used power 3 to cook the custard till it thickens.

Puff Pastry

Ingredients食材:
1 piece Pampas frozen puff pastry 冷冻酥皮1片 (25cm x 25cm)

20g melted butter

Methods 方法:
1. Cut the slightly thawed puff pastry into 3 equal pieces. Transfer to the baking tray laid with baking paper. Brush the melted butter on the surface of the puff pastry.

Instead of baking paper, I used the Tovolo Jelly Roll baking mat which has a non-stick surface thus it is easy to clean and there's no need to grease.

2. Bake in a preheated oven at 180 degrees Celcius top/bottom heat for 20 mins or till the puff pastry turns golden brown.

For my Brandt oven, I used the traditional function and bake for 20 miinutes.

3. Remove from oven, transfer the puff pastry from baking tray to wire rack to cool down.

Fillings 馅料
(enough for making 1 strudel, 够做一条馅饼)

Ingredients食材:
3 SunMoon Mandarin Orange fruitcups
3 SunMoon Peach fruitcups

* If you are living in countries other than Singapore or Indonesia where these SunMoon fruit cups are sold, you can replaced with canned Mandarin Oranges and canned Peaches for this recipe.

Method 方法:
Drain the fruitcups mandarin orange and peach, set aside.

Assembling 组装:

Lay one baked puff pastry on a plate. Spread the chilled custard cream over the layer of puff pastry. Arrange the peach pieces on top of the custard cream. Place another layer of puff pastry on top. Spread the chilled custard cream over it and arrange the mandarin orange pieces on top of the custard cream. Top with a layer of baked puff pastry.
(You may sprinkle some icing sugar.) Serve immediately. Serve 3 to 4 persons.

The cooking temperature as suggested in all my recipes serve as a guideline. Every oven has different thermostat, you may have to adjust the temperature and timing to suit your oven. Different brand of ingredients have different composites, thus there may be a slight difference in the end result.

Hi Cheryl,

Your strudel looks great! Nice to know that it is not difficult to bake.

It is a great idea to use the scoop to custard creme on the pastry... No mess!!! And consistent too!!!

Looks good! I thought using ready made puff pastry is rather unhealthy since it is made with margarine, ie trans fat?

Hi Fong, this is a simple and quick recipe thus the used of ready puff pastry. I have chosen this healthier version without any artificial colours or flavours, as for trans fat, even butter has it, so you can't avoid it totally.

Quite true, all those butter vs margarine debates, and now sugar being the top evil. Looks like the healthiest option is to cut down on baking and have desserts as an occasional treats. Maybe eat more fresh fruits instead. Btw, love your blog and layout. Neat and organized .

I love baking and I don't foresee myself cutting down on this great passion. We can opt for healthier ingredients like using aluminium-free baking powder which I switched to not long ago, using all natural food colouring instead of artificial colourings, organic ingredients etc. Thanks for your nice comments on my blog. :)
